Recipes Peanut Butter Chocolate Cheesecake

I simply love cheese cake. It does not matter what kind, as long as it’s cheesecake. When I make cheesecake at home, I have to make sure that I make at the very least, 4-5, at a time, because my Son and Grandson is sure to claim at least two for their lunches at school, and at work. Needless to say, they also devour about one to one and a half, before they even leave my house.

1 cups finely crushed creme-filled chocolate sandwich cookies, about 8

6 tablespoons sugar

3 tablespoons unsweetened baking cocoa

1 cup butter or margarine melted

In a blender, food processor, or a large mixing bowl, mix all crust ingredients. Press in bottom of ungreased 9 or 10 inch spring form pan; set aside.

3 packages (8 oz) cream cheese, softened

1 cup creamy peanut butter

1 container (1 pound) vanilla creamy ready-to-spread frosting

1 cups coarsely chopped cream filled chocolate sandwich cookies about 16

In a large bowl, beat cream cheese with electric mixer on medium speed until smooth and creamy. Add peanut butter; beat until light and fluffy. Fold in frosting. Pour half of batter over crust; sprinkle evenly with 1 cups chopped cookies. Cover with remaining batter. Refrigerate until set, about 2 hours.

4 packages (1.6 oz each) or 8 chocolate covered peanut butter cups (.6 oz each), unwrapped, and broken into pieces

1/4 cup milk

1 cups frozen (thawed) whipped topping

3 tablespoons unsweetened baking cocoa

2 tablespoons sugar

In small microwaveable bowl, microwave broken peanut butter cups and add milk on High for 1 minute 30 seconds to 3 minutes, stirring once halfway through cooking. Stir until smooth; pour over top of cheesecake. Refrigerate until set, about one hour.

In large bowl, gently mix whipped topping, 3 tablespoons cocoa and 2 tablespoons sugar until well blended. Remove side of pan.

Pipe or spoon 12 circular mounds around edge of cheesecake; garnish with candy and cookie wedges. Store cheesecake in refrigerator
